50ml Assay Liquorice Gin
20ml freshly squeezed Lime juice
10ml Sugar syrup
Ice your glass.
Add ice to your shaker, about half full.
Pour into the shaker the Assay Gin.
Add the lime juice through a sieve.
Add the sugar syrup.
Pop the lid onto the shaker and shake until it is 'too cold to hold' then pour into your glass over the fresh ice using a strainer.
Garnish simply with a wedge or slice of lime.
